Lecithin is a vegetable emulsifier made from soya lecithin (from soya beans) and is excellent for the preparation of foams.

For foams from vegetable and fruit juices

For the production of airy foams, stir in 5-10 g lecithin per litre of fat-free, cold liquid with a hand blender. Incorporate as much air as possible

Less suitable for alcohol-containing media, use SucroAir here
Lecithin is very productive. Already an addition of lecithin of 0.6 % of the weight of the liquid results in a stable foam (i.e. for 1 kg of liquid approx. 6 g lecithin). -
Foams made with lecithin can also be frozen
