Lecithin is a vegetable emulsifier made from soya lecithin (from soya beans) and is excellent for the preparation of foams.

 

Features & instructions for use

  • Powder, finely ground

  • For foams from vegetable and fruit juices

  • For the production of airy foams, stir in 5-10 g lecithin per litre of fat-free, cold liquid with a hand blender. Incorporate as much air as possible

  • Less suitable for alcohol-containing media, use SucroAir here
    Lecithin is very productive. Already an addition of lecithin of 0.6 % of the weight of the liquid results in a stable foam (i.e. for 1 kg of liquid approx. 6 g lecithin).

  • Foams made with lecithin can also be frozen
