Sauce hollandaise - lightning fast & sure to succeed


For 4 people


1g  Xanthan  or 10g  Xanthan Instant

250 grams of butter

3 egg yolks

80 ml reduction or white wine


lemon juice

Worcestershire sauce



Let the butter cook for two to three minutes. Then put the reduction or the white wine in a tall container and add the egg yolk, salt, lemon juice, Worcestershire sauce and xanthan gum (instant). Mix everything together with the hand blender, slowly adding the butter.
