Kappa is a purely vegetable gelling agent obtained from red algae. It produces gels with a firm consistency and a brittle surface.


Properties & application notes

  • Finely ground powder
  • Tasteless
  • Vegan, gluten free
  • Depending on the desired consistency, stir 5-10 g kappa per liter into cold liquid, bring to the boil briefly, pour into molds and allow to cool to set
  • Once gelled, kappa can withstand temperatures of up to 60°C
  • In acidic media it partially loses its gelling effect
