Lecithin is a vegetable emulsifier made from soy lecithin (from soybeans) and is excellent for preparing foams.

 

Properties & application notes

  • powder, finely ground
  • For foams from vegetable and fruit juices
  • For the production of airy foams, stir in 5-10 g of lecithin per liter of non-fat, cold liquid with a hand blender. Work in as much air as possible
  • Less suitable for media containing alcohol, here  SucroAir  use
  • Lecithin is very productive. A lecithin addition of just 0.6% of the weight of the liquid results in a stable foam (ie approx. 6 g of lecithin for 1 kg of liquid).
  • Foams made with lecithin can also be frozen
