Meticell is made from vegetable cellulose. Unlike other gelling agents, Meticell gels when heated and has a thickening effect in cold media. Particularly suitable for the production of vegetable dumplings, patties and breading without egg and flour.

 

Properties & application notes

  • Plant-based hot jellies
  • Vegan, gluten free
  • To prepare a Meticell base mixture, carefully stir 30 g Meticell into 1 liter of cold water and cool down to 4 °C in the refrigerator. The Meticell base mixture is stirred into the cold preparations (100 ml Meticell base mixture for 800 g preparation)
  • Heat to 40-60°C to achieve the gelling effect
  • As they cool, dishes made with Meticell lose their jelly consistency and become viscous.
