Roasted corn foam

Ingredients
250 grams of milk
25 grams of sugar
50 g corn, fried
3.5g Espuma Cold
Preparation
Boil milk and sugar. Add the fried corn and let stand, covered, for an hour. Pass through a sieve, weigh and mix in Espuma Cold. Pour the mass into an ISI siphon (0.5 L). Introduce two N2 O cartridges and set aside to cool.
